New York STEELHEAD Fillets
Raised in a recirculating aquaculture system by Hudson Valley Fisheries

CEDAR PLANK STEELHEAD RECIPE
You’ll need:
1 1/4 lbs NY Steelhead Trout
1 Cedar plank
1 tsp. Kosher salt
1 tbsp. Crushed mustard seed
3 tbsp. Dark maple syrup
2 tbsp. Vinegar (red or white)
1 tbsp. Fresh dill sprigs
Lemon for squeezing
Prep: 15 min
1. Soak cedar plank for 15 minutes then sprinkle with a thin layer of kosher salt. Preheat grill to about 400 °F (or medium heat on a gas grill.)
2. In a mixing bowl, combine the mustard seed, maple syrup, vinegar, oil and salt.
3. Place fillets on cedar plank, skin side down, and brush with maple vinaigrette, coating fillets well on all sides.
4. Place the cedar plank directly on grill and cook for 12-15 minutes with the grill lid closed until internal temperature reaches 135 °F and the fillet is partly opaque in the center.
5. Finish with the rest of your vinaigrette and top with dill sprigs. Squeeze your lemon wedge over the top and enjoy
