Reading this book was an armchair visit to this beautiful part of Italy. I loved the recipes and am ready to try: mini parmesan pancakes, grandmother’s spinach bread, and chicken cacciatore. After that, next on my list are two kinds of pistachio biscotti—one chocolate, the other with fig and apricot.

GRILLED FISH WITH MINT SAUCE
PESCE ALLA GRIGLIA CON SABA DE MENTE
I make no apologies for the use of mint in this book – it grows extensively along the Amalfi Coast and works miracles with fish and also vegetables. I grow copious amounts in my own garden for this very reason.
1 whole sea bass or red snapper, scaled and gutted
1 garlic clove, chopped
1 tablespoon chopped fresh
flat-leaf parsley
1 tablespoon chopped fresh mint
45 ml/3 tablespoons olive oil
2 teaspoons Italian '00' flour
sea salt and freshly ground black pepper
MINT SAUCE
185 ml/ 3/4 cup good-quality extra virgin olive oil
1 garlic clove, finely chopped
2 tablespoons white wine vinegar
3 tablespoons fresh lemon juice
very generous handful of chopped fresh mint
Serves 4
To make the mint sauce, mix the oil, garlic, vinegar, lemon juice and salt in a medium bowl. Mix with a whisk, then stir in the mint. Leave to infuse for 1 hour for maximum flavor.
Preheat the grill/broiler.
Rinse the fish, pat dry and season the cavity with salt. Combine the garlic, parsley, mint and oil in a small bowl, then rub the mixture over the fi sh. Season the fish with salt and dust with some of the flour.
Grill/broil the fish for 8–10 minutes. Turn the fish using a large metal spatula. Sprinkle with salt and flour and grill for a further 8–10 minutes on the other side. To test for doneness, insert a small paring knife into the fleshiest part of the fish; it should be flaky and opaque.
Transfer the fish to a large serving platter and serve with the tasty mint sauce.
