Scorched Ricotta with Herbs & Honey
I just love this dish. It’s so simple, but so impressive – the best things always are.
225 g/1 cup ricotta cheese
4 sprigs of thyme
sea salt and freshly ground black pepper
30 ml/2 tablespoons runny honey
Serves 6
Preheat the oven to 180˚C (350˚F) Gas 4. Preheat the grill/broiler to a high temperature.
Place the ricotta, thyme, salt and pepper in an ovenproof dish with the runny honey drizzled over. Place the ricotta under the grill/broiler and allow to scorch and the honey to caramelize – this should take 5–10 minutes, depending how hot the grill/broiler is, so keep an eye on it. Once you have achieved a scorched color, move the dish to the preheated oven and bake for a further 10 minutes. Serve warm.
