This gorgeous book is bursting with inventive vegetarian dishes. The recipe for today whips up in a few minutes. Place the veggies and fruit in a bowl, cook and add the hot pasta, then the dressing. You will have a lovely pasta salad for a warm summer’s evening. Next on my list: minestrone soup, blueberry nut butter cookies, and a refreshing watermelon/raspberry/lemon drink.

Lazy Tomato Peach Pasta
Serves four | 10 minutes prep time | 10 minutes cooking time
This recipe was an absolute treasure while I was working on this book. With the hottest summer on record in the Netherlands, cooking was often a bit of a nightmare, and this simple pasta, with such a short prep and cooking time, kept me sane. Mixing the salad while the pasta is hot wilts the spinach and warms everything slightly. The end result is a dish that's room temperature, rather than hot—much better for summer days. I love packing this for lunch or trips—it holds up well, even if stuck in a warm backpack all day.
3½ cups (250 grams) short pasta (such as fusilli, farfalle, or cavatappi)
2 cups (300 grams) halved cherry tomatoes
1 cup (150 grams) cooked or canned large white beans, drained and rinsed
2 peaches, pitted and sliced
2 cups (50 grams) baby spinach
½ cup (20 grams) basil
3 tablespoons olive oil
Juice of 1 lemon
½ teaspoon salt
½ teaspoon freshly ground pepper
Cook the pasta in well-seasoned water according to package instructions.
Place the cooked pasta in a large bowl. Add the tomatoes, beans, peaches, and spinach. Tear the basil into the bowl. Top with the oil, lemon juice, salt, and pepper, and mix well. Serve warm or at room temperature. This will keep well, refrigerated, for up to 3 days in an airtight container.
