Here’s a super simple stew for your first almost-fall dinner in front of the fire. Spend the cold months trying beef and barley soup, made in a pressure cooker; veal chops with spinach and a garlicky gremolata; and a slow-cooked pad Thai.

Turn your oven on when the weather starts to cool down. This tart with adorable baby pears is the first thing on my list. I plan to bake from it all fall and winter long. What to bake right after that—a hazelnut cake, or one with apple chunks and apricot jam swirls? Cinnamon cookies, or honey-scented almond biscotti? Chocolate cake sprinkled with the last of the summer’s berries or individual rice pudding tarts? What happy choices.

It’s so nice to have a big salad, with dressing on the side, in the fridge. Add some seared tuna, grilled chicken, or tofu, and you have a late summer evening’s meal. Next on my list: peach caprese; beet salad with spicy yogurt and watercress; farro with spring vegetables; and a steak salad with pear and pickled fennel. Then, on to the dressings—poppy seed and then creamy roasted garlic. First, try this salad, using smoked salmon instead of tuna.

This gorgeous book is bursting with inventive vegetarian dishes. The recipe for today whips up in a few minutes. Place the veggies and fruit in a bowl, cook and add the hot pasta, then the dressing. You will have a lovely pasta salad for a warm summer’s evening. Next on my list: minestrone soup, blueberry nut butter cookies, and a refreshing watermelon/raspberry/lemon drink.
