For breakfast, try banana buttermilk pancakes, croissant breakfast sandwiches, or this fun waffle recipe. For lunch, potato, Tex-Mex, or a classic macaroni salad. Dinner: apricot-glazed chicken, ribs, or cheesy pasta with pesto and grape tomatoes. For dessert, next on my list is a chocolate banana bread.

Blueberry Waffles
Everyone claims to have the ultimate waffle recipe, but I was bold and challenged all of those recipes to a throw down. The kids and I spent way too much time pulling up every recipe we could find for buttermilk waffles, and even more time testing all of the recipes. We even pulled out the Bobby Flay waffle recipe from his chicken and waffles throw down. It was good, but it was not the ultimate. This one is. The addition of juicy blueberries takes it right over the top.
Prep: 30 min Cook: 24 min
Yield: 4 to 6 servings
1 3/4 cups all-purpose flour
2 1/4 teaspoons baking powder
1/4 teaspoon baking soda
2 tablespoons cornstarch
3 tablespoons plus 1 teaspoon granulated sugar
1/2 teaspoon fine sea salt
3 large eggs
3/4 cup buttermilk
3/4 cup heavy cream
1/2 cup unsalted butter, melted and cooled slightly
1 1/2 cups frozen blueberries
1. In a large bowl, whisk together flour, baking powder, baking soda, corn- starch, sugar, and salt.
2. In another bowl, whisk together the eggs, buttermilk, and heavy cream.
3. Using a wooden spoon, stir the wet ingredients into the dry ingredients until batter is almost mixed together but a few streaks of flour remain. Add melted butter and blueberries and stir until just combined. Set bowl aside to rest 15 to 30 minutes. (Do not skip the resting time.)
4. Heat waffle iron according to manufacturer’s directions. Brush butter on both sides of the waffle iron. Pour 1⁄3 cup batter (more or less, de- pending on the iron) onto the iron and cook according to manufacturer’s directions.
