For you, dear baking-challenged readers, this recipe will make some sweet nibbles to last all Father’s Day, If you like peanut butter, you’ll love this book. There are all sorts of traditional recipes for brittle, stir-fries, and sandwiches, even some with jelly. And there are also unusual ones, such as toast with pickles and hot sauce, cocktails, bruschetta, and a very nutty spaghetti. Have fun and whip up these yummy banana bites. And call yer dad!
Banana Bites
These cold, chocolate-y bites look almost as great as they taste and are a guaranteed crowd-pleaser at birthday parties – just remember to check for allergies.
Makes about 18
3 bananas
125 g (4 ½ oz/ ½ cup) crunchy peanut butter
150 g (5 ½ oz) chocolate chips or cooking chocolate, broken into pieces
Line a baking tray with baking paper.
Cut the bananas into slices 2 cm (3/4 in) thick. Spoon ½ –1 tablespoon of peanut butter onto a banana slice, then top with a second banana slice. Place on the prepared baking tray and repeat with the remaining banana slices. Freeze for 1 hour.
Melt the chocolate, either in a small bowl placed over a small saucepan of boiling water on the stovetop (the water must not touch the bowl) or in short bursts in the microwave. Dip half of each banana sandwich in the chocolate. Return to the baking tray and freeze for 20–30 minutes before serving.
These will keep in an airtight container in the refrigerator for 2 days or in the freezer for up to 2 weeks.
