Matzo Brei is a staple dish at Passover and we are always thinking of ways to add that extra yum to it. We came across a recipe on New York Times Cooking that included Lox and decided to adapt it with our very own handsliced smoked salmon. It was super easy to make and delicious to boot and hope you think so too!
Matzo Brei with Nova
Serves 2
Ingredients:
2 oz smoked salmon, chopped (order online here)
2 pieces of Matzos (order online here)
Milk or Water
4 eggs
1/2 purple onion, peeled and diced
2 Tablespoons butter or vegetable oil
Salt & Pepper
Dill, chopped
Directions:
Break Matzos up into rough 1.5 inch pieces and soak them in a bowl of water or milk for 2-3 minutes until slightly softened.
Heat up butter or vegetable oil in a skillet on medium high and fry the onions until they brown.
While onions are frying, whisk the 4 eggs in a bowl with a pinch of salt and pepper.
Remove Matzos from the bowl of water/milk and gently squeeze out any excess liquid.
Add the Matzos to the bowl of eggs and allow to soak further.
Add the Matzo egg mixture to the onions and stir the mixture like you would with scrambled eggs.
Add in the smoked salmon and dill when the eggs are almost cooked through.
Serve immediately and enjoy with a cup of coffee!
