Fresh Tomato Salad with Basil - Mint Vinaigrette
Preparation 15 minutes | Servings 4 to 6
You just can’t overrate a good tomato salad. This one, with a kiss of basil-mint vinaigrette, may replace your standard Caprese salad. It’s best made with heirloom tomatoes for their sweet intense flavor and their beautiful and diverse colors. This is a great dish for parties or potlucks since it can sit out at room temperature for several hours.
4 to 6 large tomatoes (preferably heirloom), cut into thick slices
Kosher salt
Basil-Mint Vinaigrette
2 garlic cloves
1 cup lightly packed fresh basil leaves
1⁄4 cup lightly packed fresh mint leaves
1⁄4 cup olive oil
1⁄4 cup red wine vinegar
Kosher salt
1 Arrange the tomato slices on a serving platter and sprinkle with salt.
2 To make the basil-mint vinaigrette: In a food processor, combine the garlic, basil, mint, olive oil, and vinegar. Pulse until you have a somewhat smooth sauce. Season with salt.
3 Drizzle the vinaigrette over the tomatoes and serve at room temperature.
