These tart, salty and assertive flavors of Gorgonzola Piccante are a wildly delicious pairing for fresh strawberries. The season is just beginning here in New York for local strawberries, and it’s worth going out of your way for some.
We prepared this recipe with our favorite Zabar’s olive oil from our pantry department. Our fresh baguettes are baked daily at the bread counter. Plus Zabar’s cheese counter has a sale on now for Gorgonzola Piccante at our website!
Blue Cheese & Strawberry Bruschetta
Makes 12 pieces
Ingredients
1 fresh, baguette
12 medium strawberries
8 oz Gorgonzola Piccante
2 cup arugula
olive oil
sea salt flakes and fresh ground pepper
Preparation
Toss arugula with 1 tablespoon olive oil, a few pinches of sea salt flakes and a few twists of fresh ground pepper. Set aside.
Wash and slice the strawberries length-wise. Set aside.
Crumble the Gorgonzola Piccante. Set aside.
Slice a fresh baguette on the bias to create 12 pieces.
Place sliced baguette on a baking sheet and drizzle with olive oil. Broil for 1-3 minutes. Keep your eye on them, forgotten they will burn!
Spread a thin coating of Gorgonzola Piccante on each piece, this will help hold the topping in place. Next top each slice with a few pieces of arugula, then crumble on more Gorgonzola Piccante and top with sliced strawberries.
Serve right away & enjoy!
