Stir-Fried Beef Stew

Marcus Samuelsson is chef and co-owner of Restaurant Aquavit. Marcus also dedicates his time and talent to the Careers Through Culinary Arts Program (C-CAP), a non-profit organization that provides inner-city high school students with restaurant and food service training. Most recently he launched a new line of cookware Marcus Cookware as well as published his latest cookbook, The Soul of a New Cuisine: A Discovery of the Foods and Flavors of Africa.
Marcus prepared this delicious recipe during a Cooking Seminar in our Houseware Mezzanine in late 2008. It combines perfectly with Mango Couscous (which we'll feature in the near future).
