Weighing somewhere in the neighborhood of 200 lbs, it is notable for its large eyes; in the cheese world, they refer to these as "noix" because they are the size of walnuts. This semi-firm, smooth-textured cheese is not strong or pungent, but it is full-flavored, nutty and fruity, and has some of the lowest sodium content of any natural cheese's regular recipe. This is an excellent addition to a fondue pot; it melts nicely into quiche or on a burger, or serve as a table cheese with fresh fruit and whole-grain bread. Approximate Weight 8oz.

A New Recipe for German Marble Cake

This cake is perfect for the holidays. The loaf size makes it a wonderful hostess gift. Wrap it in cellophane and tie a beautiful ribbon around—presto! A beautiful and tasty homemade gift from the heart.  My German Marble Cake recipe is traditional, with a slightly modern twist-- I like to add vanilla pudding mix to the batter. This little trick is a fantastic way to add moisture and flavor to your cakes.

Franche-Comte, a dairy-rich region in France, uses 80% of its milk for cheese production, all from the red-and-white Montebeliard breed of cow. In the village of Jura, "frutieres" (small cheesemaking facilities) produce this well-loved raw cow's milk cheese. It takes 500 litres of milk to make one huge wheel of Comte, weighing in at just under 90 lbs. Beautifully fruity, sweet, and lightly tangy, Comte is famous for its notes of toasted hazelnuts, and its woodsy finish is reminiscent of brown bread. Makes a wonderful fondue, or serve as a table cheese for breakfast (or any time) with fresh fruit and a rustic, crusty loaf of bread. Approximate weight 8oz.
