I am food- and cooking-obsessed. I think about ingredients and recipes and cooking tools and techniques all the time. I read about food history and food science. I travel for the purpose of experiencing the local cuisine. I research nutrition too. Pretty much everything having to do with food and cooking is interesting to me.
So, now I’ve turned my particular attention to coffee, since I’ve recently joined the fraternity of coffee drinkers. It really wasn’t on my radar very often before now except in a somewhat sporadic, peripheral way. Now, I find myself wanting to know more, to delve deep, to fill in some of the gaps in my knowledge about my newest personal food discovery. Could I possibly work at a better place than Zabar’s if I wanted to learn about coffee? I don’t think so.
There’s so much written on the health benefits of and issues surrounding coffee that I couldn’t possibly go into it all here. One of the newest discoveries, however, seems to be about the oils present in coffee, which some people decide to avoid. Paper filters remove these oils, and there are many brewing methods which use the paper filters. It gets a little trickier, though, when you want espresso-style coffee.

I have a confession to make. I am not a regular coffee drinker. (At least, I wasn’t. More on that later.)
I know, I know. “How,” my friends and coworkers and family say with amazement, “can you not drink coffee?” “I like it OK,” I answer, shiftily, “I do like a good cup of coffee now and then, honestly. I just like tea more than coffee.” They usually turn away from me then, with pity, shaking their heads.
Believe me, it takes a certain amount of courage to admit this on the Zabar’s-we-sell-8,000-pounds-of-coffee-a-week-Blog, of all places. And we do sell fantastic coffee, of that there is no doubt. It just isn’t so much my thing as it is the rest of New York City’s thing. (Or so I thought. Again, more on that later.)
So, it was with a certain ambivalence that I began my testing of our current featured Zabar’s Housewares web special, the Aerobie Aeropress Espresso and Coffee Maker - we’re running a great web-only promo deal on now through April 3, with lots of freebies (enter coupon code ZHGIFT at checkout).
Anyway, just to let you know, in the course of my career in the specialty food biz, I’ve picked up some coffee knowledge and some tasting skills, so despite what I’ve said, I do have a pretty good idea of what to look for in coffee, flavor-wise. I also had my husband, who is a coffee lover (to put it mildly) along to give feedback as well.
Some of what we discovered is below, in convenient bullet point form:
Brewing at a 175° was a revelation. This water temperature produced a very smooth coffee flavor without any harsh bitterness. The flavor was very balanced and more nuanced than with other methods, and I even detected hints of sweetness. So if you want less bitterness in your coffee, this is a good tip.
Pouring just-boiled water into a cold mug(s), and then waiting about a minute brought the temp down to the correct range, so I then just used the water in my cup to brew. This was a great hint from the FAQ on the Aerobie website and it worked perfectly, especially because the Aerobie comes with a funnel for easy pouring.
This is a very, very fast method of making really good coffee. It really does only take 30 seconds once your water is ready.
I'm sure you’ve seen this coming, but another result that surprised me is that I’ve somehow started to drink more coffee at home now that I am using the Aerobie. Like almost every day. It’s sort of snuck up on me. I’m still not sure if I’m allowed to be in the “coffee drinkers club” while also drinking copious amounts of tea, but for now I am happy to say that I like coffee just as much as I like tea, and it is in part due to the Aerobie Aeropress (the other part is due to Zabar's Coffee). I’ve been converted.
