Cooking Demo Live @ Zabar's: Fabulous Flavors of Chanukah

Join us at Zabar's this Sunday for a free cooking demonstration and tasting featuring The Jewish Community Center in Manhattan's chef instructor Adeena Sussman. Adeena will demonstrate how to use oil to infuse various mouthwatering flavors into your Chanukah celebration with these easy contemporary recipes: Parmesan potato puffs; savory parsnip-potato pancakes; crispy ricotta fritters with raspberry dipping sauce; and olive, red pepper and lemon tapenade.

About the Instructor
Adeena Sussman is a food writer, recipe developer and chef based in New York City. Her work has appeared in Gourmet, SELF, Every Day with Rachael Ray, Sunset, Jewish Living, Hadassah and many other publications, and on websites including Epicurious.com, Gourmet.com and Myjewishlearning.com. She also collaborates with Food Network host Ellie Krieger on recipes for her cookbooks and her television show, Healthy Appetite. A graduate of the Institute for Culinary Education, Adeena is passionate about travel and food culture, subjects she covers regularly. She is also the recipient of a 2007 Harry A. Bell Travel Grant for research on an Israeli-themed cookbook.

Chanukah Jelly Doughnuts (Soufganiot)

Makes 2 to 21/2 dozen doughnuts, depending on size

Easy to prepare in advance (the dough can be refrigerated the day before frying), these plain or jelly-filled doughnuts are a favorite treat in Israel and a sweet alternative to the traditional Chanukah latkes, or potato pancakes. I discovered soufganiot a while back when an Israeli friend, Micha Avni, commented that latkes were not the only festive Chanukah food. As a mom, a baker, and a food writer, I was thrilled to find something new to engage readers and my own three sons during the 8-day holiday. No one ever says no to doughnuts, and this two-biteful variety fits any appetite perfectly. I generally make a double batch of dough, refrigerate it, and pinch off portions as needed for fresh treats or for taking along to a Chanukah party. I usually make this dough in the bread machine (on the Dough cycle). You can sprinkle fine sugar over the doughnuts or fill them with jelly, as is more traditional. I make both filled and unfilled doughnuts.

LEFTOVERS!

Thanksgiving in our house is really just an over the top affair. Somehow, every year, my Mom convinces me that we need to make food for twice the number of people actually eating – which means the amount of food on our table is really borderline obscene! And every year, when everyone is ready to pack up and leave, I remember WHY she makes me do all that extra work…  LEFTOVERS!  So when you are so full you cannot even think of eating another bite – try to remember that you will again want to look at a plate of turkey, stuffing and brussel sprouts, and it will probably be - *GASP* - the next day!

Traditional Pumpkin Pie

Ingredients
•    1 15oz can Farmer’s Market organic pumpkin
•    3/4 tsp ground cinnamon
•    1/2 tsp ground nutmeg
•    1/4 tsp ground ginger
•    1/4 tsp ground cloves
•    1/2 tsp salt
•    1 14oz can sweetened condensed milk
•    2 eggs, slightly beaten
•    1 9” deep dish pie shell

Directions
Mix pumpkin and spices together. Add remaining filling ingredients. Mix slowly, just until thoroughly mixed. Pour into pie shell. Bake at 425º for 15 minutes, then reduce temperature to 350º for an additional 32-40 minutes. Cool on rack.
