This past weekend I was able to squeak away a bit of time to try Irina's recipe for Butternut Squash Samosas. It actually didn't take nearly as long as I thought it might. I had never made any baked pastry type thing before, so it was all kind of an experiment for me. I happened to have nearly all the ingredients on hand (it's the fall after all, I almost always have some kind of squash in my kitchen). But I didn't have puff pastry dough so I used filo dough, which I had in my freezer.
I used one sheet per samosa, folded over into a square. The main difference, of course, was that my samosas came out flaky and tasty instead of puffy and tasty. But they were good! My hubby, baby and I all enjoyed them (ok the little guy enjoyed the filling a bit more than the flaky wrapper, but that's just fine).
One thing I did add when I served it was Geeta's Premium Mango Chutney. I picked this up at Zabar's when we ran the recipe, figuring that someday I would try it. This chutney is absolutely amazing! I think this belongs on everything! It's sweet and a bit spicy and full of big chunks of fruit and fresh tasting. I actually put it on toast the next day - also yummy.
