FEATURED CHEESE: French Emmentaler
Notable are the large eyes; in France, they refer to these as Noix - walnuts, because of their size. Even when young, the flavor is more pronounced than its Swiss cousin; sweet, buttery, fruity, and nutty. This semi-firm is an excellent addition to a fondue pot, it melts nicely into Quiche or on a burger, or serve as a table cheese with fresh fruit and whole-grain bread. Made from pasteurized cow's milk.
