Redwood Hill Farm’s Camellia
Do you love Camembert but you can't digest cow's milk cheese? Are you looking for a unique goat's milk cheese? Even if you just love good cheese, there are many reasons to choose this soft-ripened, bloomy-rind farmstead goat cheese made in Sonoma County, California. Creamy, runny, and a little mushroomy, it makes a beautiful and delicious addition to a cheese plate. Head cheesemaker Jennifer Lynn Bice uses the milk from her humanely-raised herd of 400 dairy goats. While her farm is not certified Organic, she uses almost exclusively organic farming practices. Camellia, named after one of their favorite goat, is pasteurized and aged for 6-8 weeks. Kosher.
Tnuva Sheep’s Milk Feta-style from Israel
Made in Israel, this pasteurized, feta-style sheep's milk cheese from Tnuva's "Mediterranean Collection" is the top choice for salads, spinach pie, and other delights. Sheep's milk gives it a nice flavor not found in the cow's milk varieties: a little sweet, a little gamy. It's not terribly strong, and it's closest to authentic Greek feta. And it's kosher, too!
A true farmstead cheese meaning that the milking to cheese production to aging and packaging all happens on the same farm where the cows graze. Made from raw milk, this wonderful cheddar is hormone and antibiotic free! It is aged in caves for six months which allows it to keep its creamy, smooth texture while acquiring a full flavor. A fine example of fine American cheese! And it’s kosher and vegetarian too!
