My sister Joy and I spent summers with our grandparents in Long Beach, NY. We
had a four bedroom bungalow on Georgia Avenue (four bedrooms, an indoor
toilet, outside shower, no closets and just a few termites).
It
was in that kitchen I learned to cook by watching my Grandma make
dinner. Sunday’s were always exciting. Our relatives would journey out
to “the beach” from the Bronx – actually they never went to the beach,
but they did breath in the ocean air.
Now – most families
would barbecue – but not at my house. My grandmother hated the barbecue
– it was never clean enough, she hated the flavor or the charcoal and
lighter fluid and yes, she knew sooner or later we would set the house
on fire.
She would crack out the Kraft Macaroni & Cheese
Dinner, in the trusted blue box, and make the best Tuna Casserole ever.
She baked it in the afternoon so that the kitchen would cool before we
ate. She would slice cucumbers and fresh tomatoes – and dinner was
served.
I no longer use the blue box – but this is her recipe,
just slightly updated. It is perfect for the Super Bowl – after all it
maybe the Super Bowl but it’s still Sunday!
This idea of a Winter Wonderland congers up pictures of snow covered streets, kids sledding, the smell of wood burning, and best of all, heavy foods that after being consumed will lull us into a warm coma. Cheese is one of those foods and has been for hundreds of years. In fact the production of cheese was a means to preserve milk and provide food for the cheesemaker and their families throughout the long, cold winters.
But the cheese was not just a means of sustenance. No, it was enjoyed, savored, even celebrated at a time of year when there were not too many things to celebrate. Although many things have changed, the use of cheese to provide warmth, comfort and happiness is one thing that has remained constant. And we are so happy that it has because we love our cheese on a cold day. So we have picked some of our favorites that are sure to make the Winter Wonderland even better.
Speaking of celebrating, L’aviateur is a celebration of a man named Clement Ader, who in 1890, was the first man to lift off the ground in a heavier than air machine. And he did it in the field that is now next to the legendary cheesemaker, Rouzaire, who made this cheese as a tribute to the great man. So go ahead and taste a gooey, buttery cheese that is sure to make you want to celebrate. Chevre d’Or is a petit chevre that is full of big flavor. As it ages that flavor becomes stronger and more “goaty” but always with a slight sweetness. Sole Gran Queso is an American original that might look like an orange Manchego but thanks to cow’s milk this cheese is sharper than the Spanish favorite. Roaring Forties is one of our favorite blues. Not only is it visually stunning with its blue wax but it texture and flavor are what will really make this cheese memorable. Nutty, sweet almost caramel flavor that complements the strong almost pungent blueness perfectly while the little salt crystals nestled throughout the cheese are sure to make you stop and savor this cheese from “down under.”
Zabar's started as an appetizing counter many many years ago and has grown since 1934 to become the family-run gourmet food and housewares store it is today. Yesterday Jeremiah's Vanishing New York wrote a really informative piece on the history of the appetizing counter in NYC, and why generally only New Yorkers know what appetizing even means.
"In New York City, until the 1960’s, there were appetizing stores in every borough and in almost every neighborhood. On the Lower East Side alone there were, at one point, thirty appetizing shops." Mary Rebecca Moyer was a daughter of the Pennsylvania Dutch country
of Berks County. Refined and well read, she never married and devoted
her life to helping in church (Reformed) and family activities and
assisting her brother Irwin (also unmarried) on the family farm.
Although having no Irish ancestry, she always signed her March letters
Mary O’Moyer. Amazingly she died on St Patrick’s Day. Some guy missed
having a wonderful wife. Her source of this recipe is unknown as was
her interest in things Irish. Her raspberry pie has continued to be
served at all family gatherings in her delicious memory.
