Ok, this could be seen as a little off season, but being a part of a food co-op I get the veggies they happen to give me. Simple as that. I need to use them. This weekend when the fire for my grill was all out of heat I had to turn to some other way to utilize those almost sprouting beautiful brown potatoes. So with bbq chicken cooking away and coleslaw already melding its flavors in the fridge I went for a comfy standard: Mashed Potatoes.
So easy, nearly effortless and rewarding! Now I’ve got a nice mound to help with dinners throughout the week.
Yesterday Zabar’s just put on sale the excellent Oxo Potato Masher. This is actually the one I use since I’m a big fan of real potato chunks in my mashed potatoes and do tend to keep the peals on them. (Isn’t that where all the vitamins are? And yes, I used organic potatoes.)
